Bolivia Sol de La Manana Peaberry

It’s been a while since we’ve had a coffee from Bolivia on our menu! We are excited to have an offering from one of the most sought-after producing groups in all South America. This coffee was grown by producers located in the rugged and remote Caranavi region, organized around Agricafe. In Agricafe’s early years it was run solely as a coffee exporting business. Agricafe’s smallholder farmer program “Sol de la Manana” began in 2013 to educate local producers by providing training and skills necessary to improve the quality of their farms.

The Sol de la Manana program began with 10 producers and has since grown to 100 contributing farms. Sol de la Manana functions like a school, using a 10-year curriculum focused on best practices, including nursery and farm management, plant nutrition, renovation, specialty harvesting and biodiversity. This attention to detail encourages producers to keep quality, productivity and long-term planning at the forefront. Farmers invested in these practices have increased production by 5 to 10 times their previous yields!

All coffee from Sol de Manana producers is processed centrally at Agricafe’s wet mill in Caranavi.  Due to the tropical hot environment, washed coffee processing is done anaerobically, with freshly pulped parchment going straight into large sealed drums for fermentation. This method uses less water and better controls processing results, while protecting the coffee’s delicate qualities. Once fermentation is complete, the coffee is pressure washed with clean water before drying and then milled to the peaberry screen size. A coffee cherry is composed of two seeds and a peaberry is the result of only one seed in the pod being pollinated. The array of fruits and chocolates layered in the cup are undeniably delicious.
