All teas come from the Camellia sinensis plant.  However, unlike black tea, green tea is not allowed to oxidize in the processing. Freshly harvested leaves are withered to reduce moisture and fired immediately to stop oxidation.  Green tea is high in antioxidants that account for its present popularity in the health-conscious arena.


Brewing Directions: Green tea is brewed at lower temperatures, around 180 degrees F.  If you don't  have a thermometer, let freshly boiled water sit for a couple of minutes before steeping the tea.  Most green teas can be steeped multiple times.  Allow the tea to steep 2 minutes for the first brewing and an additional minute for every brew after.
