Coffee Story:

This coffee is produced by small family farms located in the southern states of Chiapas and Oaxaca. The area is rich with culture of the indigenous people and ideal for the cultivation of coffee. Mountain ranges with high altitude, canopy forests providing necessary shade and rich soil all promote the perfect terroir. The coffee harvest here typically begins in October and ends in March. Once the coffee has been processed to an exportable grade, certain lots are then further selected for becoming coffee without caffeine. Those lots are then transported to a decaffeination facility that is expert in using a clean technique of decaffeinating coffees.

Water processed decaffeination is a methodology that begins with a high-quality coffee to start with, and no chemicals or harmful additives used throughout the extraction process. The green coffee is presoaked in water to expand the beans for caffeine extraction. The beans are then introduced to a solution concentrated with coffee soluble that extracts the caffeine without extracting the coffee’s flavor.
