Roundsman Prep Cook/Dishwasher
FT 30+ hours/week Prep Cook with kitchen experience and willing to help in dishpit. Busy breakfast & lunch restaurant. Seasonal position. I. Food Preparation (A) Following all Montana Health Department Standards & MCT rotation, labeling, temperature and handling standards. To be certified with passing grade in Serve Safe via FVCC as scheduled and sponsored by MCT. (B) Safe Knife Handling (C) Follow Standardized MCT Recipes (D) Produce Daily Shift prep list that includes cutting vegetables, slicing meats and cheeses, salad dressings, sauces and simple batch recipes (G) Be able to lift and move a minimum of 30# (H) Work all three Cafés as scheduled and familiar with all Prep Cook and Line Cook responsibilities. (I) Line Stocking and Storing food products according to FIFO procedures. (J) Operate and restock dishes and cooking equipment on ongoing basis throughout service as needed. (K) Maintain MCT Culinary Dress Code Standard II. Menu Knowledge (A) Understand all menu items, ingredients and production techniques. (B) Describing and recommending food options off of our menu and being knowledgeable of and communicating possible food allergens. (C) Knowledge of local and MT grown products.

Assistant Manager of Production, Central Kitchen
Position Skill Summary: Central Kitchen Mgmt. position requires strong leadership, motivational, organizational, time management and cooking skills. This position is responsible for organizing, supervising and participating in baking, food preparation/production and packaging for distribution to our retail food cafes.
The Kitchen Manager Central Kitchen Manager Position responsibilities and expectations include: I. Management Responsibilities (A) Maintain MCT, State & County Health Safety Standards. (B ) Consolidate Daily Cafe Requisitions into Shift Work Assignments (C) Delegate and Supervise Shift Assignments (D) Facilitate all Production, Packaging and Labeling Quality Controls (E) Monitor and Maintain Dry, Refrigerated and Frozen Food Storage Areas including completing temperature control logs and waste reports. (F) Ensure Stocking and Storing food products according to FIFO procedures. II.
Food Preparation (A) Follow all Montana Health Department Standards & MCT rotation, labeling, temperature and handling standards. To be certified with passing grade in Serve Safe via FVCC as scheduled and sponsored by MCT. (B) Fully skilled in all basic cooking methodology. (C )Participate in food production responsibilities throughout the shift working with associates in hands on supervisory position. (D) Consolidate Daily Cafe Food Requisitions for Production (E) Organize, Delegate and Supervise Work Shift Assignments (F) Reconcile Daily Cafe Requisitions, Central Par Stock and Food Ordering (G) Monitor and Maintain Dry, Refrigerated and Freezer Storage according to Sanitary Standards. (H) Be able to lift and move a minimum of 30# (I) Maintain MCT Culinary Dress Code Standard (J) Safe Knife Handling and Equipment Operation III.
Human Resources (A) Participate with Food Sales Coordinator in Development and Review process of Central Personnel (B) Foster a positive working environment and team morale. (C ) Conduct Ongoing Technical Training and Team Building Dynamics (D) One on One and Team Coaching IV. MCT Corporate Proficient Knowledge of MCT Scope of Coffee Operations to include the following Coffee Education: - Coffee 101 - Espresso 101 - Intro to Cupping - Coffee Seminars: Flavor, Roasting, Blending - Energizing Service & Energizing Sales V.
Communication (A) Create open communication standard within Central Team and with Cafe Mgmt. Teams. (B) Relay information to coworkers in an appropriate manner. THINK before you speak.
